Mountain mint can be harvested in the earlier stages (before it flowers), and while it is flowering. This foliage dries nicely and must be harvested in flowering stage for drying. The fragrance is beautiful and it adds a nice lime green or silver green color depending on harvest stage! Mountain mint foliage topped with tiny, mounding flowers.
